Thermometers. - A thermometer for use by bakers is provided with two scales b, c arranged to allow of the determination of the temperature of the liquid which, when mixed with flour at any temperature, produces dough at a given temperature. The temperature of the flour, say to, is read off on the scale b and then the required temperature of the liquor is the number on the scale b that is opposite to the graduation t on the scale c, the latter scale being graduated empirically. When it is desired to vary the temperature of the dough, the scales b, c may be made relatively movable, an indicator on the scale b being set opposite to the number on the scale c equal to the temperature of the dough.
