Abstract

Fermenting.-In fermenting beverages under pressure, as described in Specification 4622/08, the hydraulic pressure may be replaced, wholly or partly, by a pressure of carbon dioxide, air, oxygen, nitrogen, &c. applied to the surface of the liquid before and during the fermentation. A gaseous pressure of six atmospheres is stated to be sufficient.
