Abstract

20,489. Kuhn, E. W. Nov. 29, 1909. [Addition to 27,831/09.] Materials for making beverages; malt extracts.-The beverages prepared as described in the parent Specification are enriched with dextrin by adding ground malt to the diluted grape juice or decoction of raisins during the boiling and, after cooling, adding a malt extract containing amylase to transform the dissolved starch into dextrin. The malt extract is prepared with cold water. and heated for a short time to 80‹ C., which destroys dextrinase but leaves amylase active.
