Abstract

13,124. Berkel, W. A. van. June 4. Cutting and slicing meat.-The meat plate of a slicing-machine is provided with a curved meat-support c adapted to press the meat yieldingly against the knife-edge. The support is secured to a bracket d carrying a lateral extension d<1>, which has a guide-pin f and a guide-rod e passing through holes e<1>, e<2> in the table a. Below the rod e is a spindle g passing through a hole in the table and having at one end a head g<3>, between which and the table is mounted a spring h. The other end of the spindle g carries a bell-crank lever g<2>, of which one arm i engages a slot in the end of the rod e. When the knife presses the meat against the support c, the spring h is'compressed by the movement of the rod e, thus pressing the meat yieldingly against the edge of the knife.
