Abstract

Rolling - machines. - In a dough sheeting, rolling, or like machine, the sheeting-rolls are arranged in pairs in the fixed frame 1 and in a hinged part 3, and are driven by a motor &c. through the gearing as shown in Fig. 1 in which the pinion 77 drives by means of the pinions 69, 78 the two trains of gearing connecting the sets of rolls. The hinged frame 3 is provided with a spring-controlled buffer-stop 29 for the open position, and is secured in the closed position by adjustable hooks 25 and lugs 24 or other means. The upper rolls are preferably concave, and one roll of each pair may be flanged. A lump of dough is fed from the hopper 4 to the rolls and delivered in a sheet to the canvas or like conveyer 20 driven by chain and sprocket from the shaft 18 with a tensioning-pulley 95. The sheet is engaged on the conveyer by a curling-device 34 consisting of a weighted pivoted plate having a down-turned edge to engage the dough, and by a coiling-device 35 consisting of a pivoted serrated plate adjustably held by a screwed arm and fixed bracket 48 on the pressure board 42. The conveyer travels over a table, alternate sections of which are movable bv means of attached rails 53 and cams 56 and fixed by locking-bolts on the operating-lever engaging arcuate slots 61 on the frame. The undulations in the table produce a kneading action on the dough. The pressure board is adjusted by screws 85, 96 connected by a chain 98 and sprocket-wheels and operated by a hand-wheel 97.
