Abstract
1516358 Shaped meat or meat analogue products PROCTER & GAMBLE CO 15 Sept 1975 [16 Sept 1974] 37752/75 Heading A2B Shaped protein products are made from textured protein particles which have a hydration capacity of 1-4 times their weight of water (e.g. meat or texturised casein, egg white, soybean, safflower seed, corn, peanut, wheat, pea, sunflower seed, cotton seed, coconut, rape seed, sesame seed, leaf or yeast protein) which are coated with a binder and heat treated. The binder comprises soy protein in solution at pH greater than 9, mixed with an acid which on heat treatment reduces the pH to 5.5 to 7.5. Suitable acids are monocalcium phosphate, sodium acid pyrophosphate, sodium aluminium phosphate, dicalcium phosphate, sodium aluminium sulphate, glucono-#-lactone, potassium hydrogen tartrate, or potassium acid phosphates. The textured protein particles may contain 30-100% protein and 0-70% of non-proteinaceous material which may comprise added carbohydrates, vitamins or flavourings and may be hydrated. Heat setting is carried out at 120-450‹F by baking, frying or microwave. The binder may additionally include colourings, flavourings, oils and fats (examples listed in Specification) and emulsifiers (examples also listed). The product may be in the form of a hamburger, pattie, meat loaf, meat ball, or an imitation meat chunk or slab. The binder is applied e.g. by spraying or tumbling.
