1495194 Texturised vegetable protein foodstuff COOPERATIEVE VERKOOP-EN PRODUCTIEVERENIGING VAN AARDAPPELMEEL EN DERIVATEN AVEBE GA 8 Oct 1976 [14 Oct 1975] 42085/75 Heading A2B A textured vegetable protein product for human and animal consumption is made by mechanically working a mixture of (i) vegetable material containing (dry basis) at least 20 wt.% protein and less than 2 wt.% fat, (ii) potato pulp and (iii) water at elevated temperature above 100‹C, e.g. 100-210‹C, and elevated pressure, e.g. 50-5000 psig, and extruding the resultant flowable mixture through a restricted orifice into an environment of lower pressure and temperature to form expanded fibres. The ratio of (ii) to (i) may be 5 - 100 wt.% (dry basis) and the mixture may contain 20-50 wt.% water. Specified materials (i) are soy flour, soy protein concentrate, isolated potato or soy protein, and peanut, almond or cottenseed flour. The pulp (ii) is the by-product of potato starch production and comprises fragments of cell walls and residual starch and possibly residual protein.
