Abstract

1513854 Producing caviare-like proteinaceous bodies AKADEMIE DER WISSENSCHAFTEN DER DDR 16 March 1977 [23 March 1976] 11099/77 Heading A2B Discrete particulate proteinaceous shapes are made by forming wheat gluten and bovine blood plasma, and optionally at least one flavouring and/or colouring agent into droplets before passage through oil heated at 60-200‹C. The shapes may contain egg protein and Xanthanas polysaccharide. The droplets may be deaerated before passage through the oil. Examples describe the use of herring homogenate and egg albumen which may be added to soups.
