Abstract

1512843 Alkaline bleaching of fish INTEROX CHEMICALS Ltd 26 April 1976 [13 May 1975 9 Feb 1976] 05031/76 and 20031/75 Heading A2E Dark fish meat is bleached by contacting in undissolved state with aqueous solution containing up to 5 wt. % H 2 O 2 at an initial pH of 10.5-11.5, removing residual H 2 O 2 from the bleached fish and adjusting the pH to neutral or below, e.g. 6-7. The pH may be obtained by means of Na 2 CO 3 , NaOH or Ca(OH) 2 and may be maintained constant or allowed to fall during the contact H 2 O 2 and Na 2 CO 3 may be obtained in situ by decomposition of sodium percarbonate. Treatment may be carried out at up to 100‹C, e.g. 10-30‹C, with a fish : solution weight ratio of 1:3-1:30, and the solution may contain 0.5-5 wt. % H 2 O 2 , 0.1-10 wt. % polyphosphate, e.g. Na tripolyphosphate, and peroxosulphate. Residual H 2 O 2 may be removed by water washing, compression or rapid heating or by treatment with a solution of catalase at pH 7.5-8.0, L-ascorbic acid or Na 2 SO 3 . The pH may be adjusted by acetic, citric, L- ascorbic or malic acid. The fish may be blue whiting, coley or inferior cod meat in flaked, shredded or macerated form.
