Abstract
1503765 Applying peat flavours to malted barley A G TAYLOR and G N BATHGATE 9 Nov 1976 [17 Nov 1975] 47225/75 Heading C6E In applying peat smoke to barley malt e.g. for use in the manufacture of Scotch malt whisky, the temperature of the burning peat is maintained at between 325 and 375‹C through controlled pyrolysis. Coarsely ground peat of 5 cms particle size is burnt during passage on a moving chain grate by a stream of hot air and combustion gases at 400‹C, produced by means of a light gas-oil burner, admixed with inert gas. When the temperature of the bed of peat increases above 350‹C further inert gas is introduced into the gaseous input to quench the combustion. Inert gas: steam (preferred), carbon dioxide or nitrogen.
