Abstract

1471062 Isomerizing glucose to fructose ROQUETTE FRERES 10 April 1974 [10 April 1973] 15980/74 Heading C2S [Also in Division C3] A method of isomerizing glucose to fructose comprises using an enzyme produced by a strain of the species Streptomyces violaceoniger, e.g. CBS 409-73 having the following taxonomic characteristics: appearance of spores: globular, measuring 0À9 to 1À2 Á and having smooth or slightly rough walls; appearance of mycelium: sporulating, greyish brown, liquefying into moist damp spots and having monopodial sporophores; appearance of spirals: short, in lumps, having more than 1 tendril; appearance of mycelium: whitish to yellow (chamois); A pale pink soluble pigment can be extracted therefrom and is produced in skimmed milk; cultivation in "iron-peptone agar": no melanoid pigments (these do not appear either in a culture on tyrosine-agar). Diastasic action: agarpositive; starch-positive. Proteolytic action: coagulation of milk, good, peptonization, liquefaction of gelatine. Sugars assimilated by the strain: saccharose, inositol, rhamnose.
