Abstract

1459211 Dried yeast DISTILLERS CO (YEAST) Ltd 16 July 1974 [23 July 1973] 34949/73 Heading A2D [Also in Division C6] Active dried yeast of improved activity (Fermentometer test) is obtained by drying the yeast in intimate admixture with 0.5-3% by weight, based on yeast dry weight, of an additive selected from (1) an ester of a polyglycerol (or mixture of polyglycerols) with saturated fatty acid, particularly palmitic or stearic acids, and (2) ascorbyl palmitate. The ester (1) may be a reaction product containing monoester, di- or higher esters and unreacted free fatty acid. The active dried yeast may be made by spray drying a yeast cream to give a product of 40-50% dry matter and then further drying to 90% or more dry matter in a fluidised bed. Alternatively, a moist compressed yeast of 27-40% dry matter is obtained by filtering and centrifuging yeast cream including the additive, the compressed yeast is comminuted under high shear in a mill and the resulting particles of a diameter of 1.7mm or less are further dried in a fluidised bed. An aqueous suspension of additive (1) or of an ethanolic solution of (2), may be introduced into the yeast cream before drying. The active dried yeast product has satisfactory storage stability when stored over 7 days in nitrogen at 43.3‹C.
