Abstract

1440183 Cured meats UNILEVER Ltd 2 July 1973 [3 July 1972] 30978/72 Heading A2D A process for the production of cured meat comprises treating the meat with an alkali metal nitrite under conditions such as to leave in the cured meat an excess of nitrite over that which reacts with the pigments in the meat, and introducing ethoxyquin into the meat so as to reduce the formation of carcinogenic nitrosamines from the excess nitrite when the cured meat is grilled or fried. The ethoxyquin may be applied to the meat in the form of a dispersion in brine. Alternatively the ethoxyquin may be injected into the meat. The meat preferably contains excess nitrite in an amount of 10-200 ppm and 5-250 ppm of ethoxyquin.
