Abstract

1421226 Culture concentrates of lactic acid bacteria STICHTING BEDRIJVEN VAN HET NEDERLANDS INSTITUUT VOOR ZUIVELONDERZOEK 25 April 1973 [2 May 1972] 19665/73 Heading C6F A starter culture including at least one strain capable of fermenting lactose to lactic acid is produced by propagating a culture of the required strain(s) (specified) in a buffered aqueous medium containing whey solutes and vegetables and/or animal protein and removing part of the liquid medium to produce a cell concentrate. The pH may be raised to neutrality between cultivating and separating, and the residual protein dissolved by addition of e.g. sodium citrate. The whey, protein, and buffer solutions may be separately pasteurized before mixing. The temperature of the mixture should not exceed 65‹C, though the whey may first be pasteurized at 85-100‹C for 10-30 minutes, then centrifuged. The animal protein may be skim milk, constituting 5-10% of the medium. The buffer may be equimolar amounts of sodium and potassium dihydrogen phosphates. The culture concentrate may be used in cheese manufacture.
