Abstract

1383224 Skim milk substitutes NESTLE SA 22 May 1972 24005/72 Heading A2B A protein composition particularly suitable as a replacement for skim milk comprises, on a dry solids by weight basis, 15-30% fish protein isolate containing at least 90% protein less than 0.5% lipids and 1-10% minerals, and having a nitrogen solubility index of 80-100, and 70-85% whey solids. Such compositions may be prepared by forming an aqueous blend which is then homogenised at a total pressure, as defined of at least 100 kg/cm<SP>2</SP>, the pH of 'the product being preferably 6.2-7.0. The homogenised blend may be concentrated and dried. Alternatively a dry blend of the constituents may be subjected to agglomeration.
