Abstract

1525791 Cheese preparations STAUFFER CHEMICAL CO 16 Jan 1976 [3 Feb 1975 1 May 1975] 01708/76 Heading A2B A cheese product comprises cheese (including imitation cheese), a cheese emulsifier and a partially soluble modified whey solids product derived either by adding a divalent metal ion to a cheese whey solution and adjusting the pH to between 6 and 8.5 at below 140‹F to ppt. the modified whey solids product, or by adjusting the pH of a raw cheese whey containing at least 20% acid cheese whey to a value of 6.0-8.0 to ppt the modified whey solids product. Preferably the emulsifier is present in an amount of 1-3% by wt. and is a 5:1 to to 1:5 by wt. mixture of sodium aluminium phosphate and sodium, potassium or calcium citrate.
