Abstract
1355799 Frozen foods UNILEVER LTD 11 June 1971 [15 June 1970] 28884/70 Heading A2D A method of forming slabs of frozen food material comprises preparing for extrusion pieces of the food material, .extruding said material, immediately passing said extruded material through a freezing zone wherein the material directly contacts a liquid freezant at approximately its boiling point, and passing the resultant ribbon of material to a unit for sub-division. The freezant is preferably a fluorinated C 1-4 saturated hydrocarbon. The orifice through which the food material is extruded is preferably heated to prevent adherence of food thereto. The method may be carried out in the apparatus shown in the Figure, wherein pieces of food are pumped to extruder 4 and extruded into a freezing zone 6 and onto conveyor 10. A hollow jacket, which may be provided with a fluid to prevent freeze-up, surrounds the extruder outlet orifice. The freezant is sprayed on to the extruded food material. Freezant gas is condensed at 15 and returned to reservoir 11. The frozen ribbon of food material from the freezing zone passes to sub-division unit 20. The method is particularly applicable to the treatment of fish pieces.
