Abstract

1328045 Device for cooking food W M BARDEAU 2 March 1972 [3 Aug 1971] 9903/72 Heading A4D An apparatus 10 for supplying steam to an enclosure for processing food, comprises a boiler, a restricted passage 58 Fig. 3 (not shown) leading from the boiler to the enclosure, a conduit 82 for supplying the boiler with water at a regulated pressure, a capillary tube 84 for supplying the water at a given rate and a solenoid operated valve 86 for shutting off the supply of water to the boiler. The valve 86 is located downstream of the capillary tube 84 and a reservoir in the form of a bellows-type accumulator (92) Fig. 4 (not shown) or a flexible tube (94) Fig. 5 (not shown) may be included between them. The reservoir accumulates water when the valve 86 is closed and discharges the water on its opening. The boiler comprises brass tubes 30-36 set in an aluminium casting (62) Fig.3 (not shown) which is heated by electrical resistance elements (60). The boiler is mounted in the base (12) Fig. 1 (not shown) of the apparatus 10 and a perforated upper surface (70) of the base and a lid (16) form the enclosure for food. The bore and length of the capillary tube 84 determine the temperature and moisture content of the oven and the reservoir provides a surge of water to purge the enclosure with fresh steam. Water conditioning equipment (80) Fig.6 (not shown) is provided and the boiler has a removable plug 44 to allow the introduction of cleaning agents.
