Abstract

1280300 Mead ZAVOD "LITOVSKY MIDUS" 30 Sept 1969 47954/69 Heading C6E A process for the production of mead comprises melting honey, mixing molten honey with water, boiling the honey solution so obtained together with added herbs viz hops, dried linden flowers, juniper berries and dried acerno, cooling the resulting wort to the temperature required, for the growth of yeast, adding brewers' bottom - fermentation yeast to the cooled wort, allowing the wort to ferment, adding to the wort during fermentation at least two freshly prepared and boiled honey solutions of higher honey concentration than that of the first solution decanting the mead when the alcohol, sugar and acids contents of the fomenting wort reach desired values, stopping the fermentation of the decanted mead by cooling, ageing it at a temperature of from 0 to -3‹C., and finally filtering the mead product. Cranberry extract and alcoholic mint may be added during fermentation, after the addition of the second honey solution.
