Использование: в винодельческой отрасли. Сущность изобретени : способ производства белых и розовых столовых виноматериалов предусматривает приемку и переработку винограда, отделение свежего сусла и его окислительную обработку, приготовление дрожжевой разводки и ее внесение в сусло, сбраживание сусла, сульфитацию и стабилизацию молодых виноматериалов . Окислительную обработку сусла провод т путем внесени в него разводки дрожжей, приготовленной аэробным Ориентированием свежесброженных виноматериаловs при этом разводку дрожжей внос т из расчета 20- 60 мг альдегидов на 1 дм3 сусла. Свежесброженные виноматериалы подвергают аэробному ферментированию до концентрации в них альдегидов 300 - 500 мг/дм3, а перед ферментированием в них внос т свежее сусло из расчета 10-20 г/дм3 Сахаров. 1 з.п. ф-лы, 2 табл.
