Abstract

1275331 Spray-dried starch-containing product CEREBOS FOODS Ltd 19 April 1971 [6 March 1970] 10951/70 Addition to 1215465 Headings A2B and A2E An ungelatinised starch-containing instant product is produced by spray drying an aqueous composition comprising a hydrophilic colloid and ungelatinised starch and, if desired, flavouring, colouring and nutritional agents, fillers and diluents, at a temperature whereby substantial gelatinisation of the starch is not effected. The hydrophilic colloid provides paths in the product whereby hot aqueous liquid can penetrate through the product. The product may be agglomerated by spraying with water or aqueous binder followed by treatment in a rolling pan or fluidised bed. The colloid may be gelatin, gum agar, tragacanth or guargum, sodium alginate or a cellulose ester. The product may be in the form of a soup, sauce, gravy or dessert mix. Substances which may be used include potato starch, non-fat-milk solids, hydrolysed vegetable protein, maize oil, salt, caramel, sugar, monosodium glutamate, meat extract, mushroom powder, onion, garlic and fruit flavours and vanilla essence.
