Abstract
1,259,758. Snack food. ITT INDUSTRIES Inc. 21 May, 1970 [23 May, 1969], No. 24653/ 70. Heading A2B. A tubular corn snack product is prepared by cooking a mixture of corn, lime, and water until partial gelatinisation is attained, soaking the cooked ingredients in added water, washing, grinding, extruding the resulting ground mass through a tubular forming die, cutting the extrudate into predetermined lengths, and frying to form a tubular product having case-hardened inner and outer tubular surfaces with a flaky open interstitial structure between the surfaces. Prior to the grinding step, a small quantity of cooking oil may be added. The cooking is preferably effected at 200‹F with constant agitation, the soaking with occasional stirring, and the frying at 375-390‹F. The product is preferably seasoned with salt. Reference has been directed by the Comptroller to Specification 1,139,762.
