[Also in Division C2] Preservatives for bakery products e.g. bread or pastry, comprise mixed anhydrides of sorbic acid with palmitic or stearic acid which contain 10 to 20% by weight of sodium or potassium chloride (see Division C2). The mixture is added to the dough made with yeast and mould growth is inhibited.
