Abstract
1,250,535. Fruit beverages. ASTRA-WALLCO A.B. March 3, 1969 [Dec. 4, 1968], No.11323/69. Heading C6E. A dry powder for preparing juices having fruit flavour when dissolved in an aqueous medium, the fruit flavour having substantially the same intensity and duration as the flavour of the corresponding natural fruit juice, comprises at least one flavouring agent, colouring agent and sweetening agent, and a buffering system comprising at least one polybasic acid and at least one alkali metal (sodium or potassium) or calcium salt of a polybasic acid, and the buffering capacity of the system is such that when the powder is dissolved in a predetermined volume of the aqueous medium and the resulting juice is consumed, a decrease in pH around the gustatory nerves is produced, and the duration of the decrease is substantially the same as that produced by the corresponding natural fruit juice. The amount of the buffering system present is such that the PH of the aqueous medium is reduced to 2.5 to 4.5. Buffering acids: adipic, citric, fumaric, maleic, succinic and tartaric acids. The ratio of acid to salt is 1.5:1 to 10:1. Part of the acid and/or salt may be replaced by alkali metal carbonate in order to provide carbonated beverages. A typical formulation contains anhydrous citric acid, anhydrous trisodium citrate, ascorbic acid, sodium cyclamate, sodium saccharin and calcium phosphate together with food colours and orange aroma. Lemon, lime, apple, strawberry, raspberry, blueberry and gooseberry aromas are also mentioned. The formulations may also contain sugar, gluconic acid, polysaccharides, carboxymethyl cellulose, carragheenins, sodium alginate, esters of alginic acid and gum tragacanth.
