A soluble coffee product is obtained by coating particles of frozen aqueous coffee extract with 5-85 wt per cent dried soluble coffee, and drying the coated particles. The frozen extract particles preferably have a size of 100-12 mesh U.S. standard sieve, and the dried soluble coffee a particle size less than 200 microns. The coated particles may be air, vacuum, or freezedried. The dried soluble coffee powder is preferably obtained by spray-drying.
