Abstract
1,230,105. Food product. UNILEVER Ltd. 12 Aug., 1968 [14 Aug., 1967], No. 37246/67. Heading A2B. A food product comprises a roll of several turns of a crimped crisp edible film no more than 0.05 inches thick and in which the crimps extend axially along the roll. Preferably the amplitude and separation of the crimping are about the same as the film thickness. The film may comprise a cooked edible starch based composition such as a protein denatured heat treated flour, or a fibrous or cellular structure based on a dried puree of fruit or a cellular structure based on artificial cellulose. The product may be coated, or it may have a filling between the turns. The film may be formed by passing the wet mix through a restricted orifice on to a travelling heated surface, for example through a nip involving at least one roller from the surface of which the dried film is scraped.
