Zeaxanthin is produced by allowing a hydride to act on dihydrorhodoxanthin in the presence of an inert solvent. The hydride may be a mixed metal hydride or an alkyl metal hydride- The dihydrorhodoxanthin may be prepared by reduction of rhodoxanthin with zinc or cadmium in an organic acid in the presence of an optionally halogenated aliphatic or aromatic hydrocarbon.
