Abstract

[Also in Division A2] A portion of fresh meat is preserved by placing in a container which is sealable to produce a substantially gas-tight package and, before sealing, air in contact with the meat is replaced by a gas mixture consisting of 50-70% by volume of oxygen and 50-30% by volume of carbon dioxide to the extent that, after sealing, the gas space in the container retains not more than 10% by volume of air, preferably the resultant ratio of oxygen to carbon dioxide within the sealed container is in the region of 2:1 by volume. Suitable containers include lacquered tin cans, glass vessels with glass or metal lids sealed with rubber rings, and plastics or aluminium foil containers with lids of substantially impermeable plastics films. Preferably, the base of the container is corrugated or indented. An example of a container in which a portion of meat can be stored for up to 7 days under refrigeration by the method of the invention, comprises a body of deep drawn 0-5 mm. thick polyvinyl chloride film and a lid of 0.15 mm. thick polyvinyl chloride film provided with an anti-condensation coating, the lid being welded to the edge of the body.
