The method for preparing a purified extract of hops from a crude solvent extract described and claimed in the parent Specification is improved or modified by employing for the purifying extraction any solvent (other than 80-90% aqueous lower alcohols) which dissolves α-acids and at least part of the other resins and the essential oils, but in which the fixed oils are insoluble. The preferred solvent consists of more than 90% by volume of methanol and/or ethanol and 5 to 10% of water, such as 95% by volume methanol in admixture with 5% by volume of water.
