Dried fruit or vegetable products in flake form are obtained by dehydrating the sliced or diced fruit or vegetable on belt 7 to a moisture content of 12-30% by weight, crushing the fruit or vegetable by passing it between counter-rotating rollers 5, 6 to form flakes having a broken cellular structure and then dehydrating the flakes on another belt to a moisture content of 2-10% by weight. The rollers 5, 6 are rotating at different speeds in water baths 10, 11 to have a thin film of water deposited thereon to prevent the product being processed from sticking to the rollers. The scrapers 12 control the thickness of the water film on the rollers. The scrapers 8, 9 help to remove the flakes from the rollers.
