1453699 Imitation meat UNILEVER Ltd 5 Nov 1973 [6 Nov 1972] 51079/72 Heading A2B Laminae of protein-containing food products which have been prepared by extrusion as described in Specification 1400411 and have a water content of 20-60% by weight are subjected to non-uniformly distributed pressure after the structure has become fixed. The pressure may be exerted by rollers set with a gap less than the thickness of the laminae. One of the rollers may have a roughened surface. The treated laminae may be subsequently dried to a water content not exceeding 11% by weight.
