In a method for forming readily reconstituted dehydrated apple segments, the segments after partial drying, are punctured to define a plurality of perforations whilst avoiding those parts intermediate the perforations and then further drying the segments. The apples are cored, peeled and sliced and pieces about “" thick sprayed with or dipped in anti-discolouration solution e.g. sodium bi-sulphite, dried to a moisture content of 16% to 30% by weight and perforated. The perforating apparatus comprises two steel rollers 12 and 14 (Fig. 1) carried on spindle 16 adjustably spaced by turn-buckle 18. Roller 12 is coated with a smooth resilient coating 20 (e.g. rubber), roller 14 is provided with a plurality of radially projecting studs 22 (Fig. 2) 5/16 inch long and the blunt end measuring # inch Î 1/16 inch. The spacing of the rollers is arranged to allow the studs to impinge 0.1 inch upon the surface 20 of roller 12. The partially dried segments are passed between the rollers which operate in counter direction, for perforation. The moisture content is then reduced to less than 5%. The dried perforated apple segments may be placed in a pie shell with sugar solution and seasoning, the apples being re-hydrated during baking, or the sugar solution and seasoning may be added through a hole in the pastry at a later stage if the pie is to be transported uncooked. Alternatively, all the ingredients may be added to the pastry shell and only water added when required for baking. In each case the apples are reconstituted during baking and need no prior soaking.
