Abstract
Cream is pasteurized by short-time high-temperature heating, cooled to a temperature within or below the melting range of the fatty substances contained in the cream, and at which temperature the cream is subsequently homogenized. The cream may be dairy cream or cream in which part or all of the butter fat content has been replaced by other fats.
