Abstract

Dried plant tissue is preserved by mixing 10 to 95% by weight of such tissue in particulate form with 90 to 5% by weight of fat and/or oil, and subjecting the mixture at a temperature at which the fat and/or oil is liquid but does not substantially degrade the plant tissue to alternating pulses of higher and lower pressure, e.g. by the use of a rotating arm or paddle type mixer. The mixing operation is continued during any cooling of the product. Where none is present in the dried plant tissue, a naturally occurring antioxidant may first be incorporated in the fat and/or oil, e.g. by mixing with a dehydrated herb or spice such as rosemary, sage, turmeric, ginger, onion, garlic, pepper, allspice, cardamon, cassia, cloves, mace, mustard, nutmeg, thyme and parsley. In the examples dried parsley and dried onion are preserved using beef suet and hardened groundnut oil as fats, and in one example after treating the fat with mixed spices. Other oils and fats specified are olive oil, sunflower oil, and mutton fat.
