Abstract

The supply of one of the ingredients to a dough mixer is automatically controlled in dependence on the consistency of the dough to maintain the consistency at a desired value. In one arrangement, flour and water are mixed to form dough in batches and each batch is mixed until the mixer has used a given quantity of electrical energy. The times taken to mix each batch are measured and stored in a digital computer which continuously averages the last eight batch times and determines the additional amount of water supplied to the next batch so as to correct consistency variations. A time corresponding to the desired consistency is set into the computer and actual times are compared by back counting. A modification is referred to in which the amount of water is modified if a predetermined number of mixing times in a group vary by more than a predetermined amount from a preset time. The power, current or torque of the mixing motor may alternatively be used as a measure of consistency.
