Abstract

1,092,769. Cooking slices of bacon. ARMOUR & CO. Aug. 15, 1966 [Oct. 4, 1965], No. 36361/66. Heading A2E. Raw slices of bacon are arranged in edge-overlapping draft relation and the draft is subjected to microwave energy at a level for cooking the bacon slices. Microwave frequencies in the range 400-20,000 megacycles per second at energy levels of from 8 to 25 kilowatts and higher, are specified, giving dwell times of 1-2 minutes. Overlapping slices 10 of raw bacon, the fat edges of the slices being uppermost, are conveyed by a 4x5 mesh fibreglass conveyer 15 through an aluminium or copper chamber 16 wherein the slices are cooked by microwave energy delivered through a guide duct 17 and transverse slots 18. Fat rendered during the cooking is collected in an inclined drain 22 and vapours are taken up in a current of air at a temperature ranging from ambient up to 230‹F., which air current enters the chamber 16 through an inlet 24 and is exhausted through an outlet 25. The cooked slices are subjected to a current of air for removal of excess fat and are then chilled to 40‹-50‹F. by an air blast. After chiling, a waxed board or parchment paper is placed over the cooked draft of bacon. The resulting assemblage is turned so that the cooked slices rest on the board or paper with the fat edge portions of each slice on the lower side of each draft and is then packaged in a transparent wrapper. The fat edge portions are curled by the cooking to form spaced ribs in the draft such that the lean portions of the slices are in nested relation. Microwave energy reaching the ends of the casing 16 is absorbed by water held within containers 19 and 20.
