Abstract

In the malting of barley, wheat, rye and other cereal grains, the grains are treated during germination with formaldehyde, a compound producing formaldehyde e.g. paraformaldehyde, and/or formic acid, as by atomizing on to the grains an aqueous solution containing 0.1-5% of the formaldehyde, paraformaldehyde or formic acid (as the case may be) in a proportion of 4-6 litres of the solution for every 100 Kg of dry grains. The treatment is carried out between 24 and 100 hours after the commencement of germination, advantageously when the first rootlets have appeared on the grains. The atomizers employed are secured on the usual malt stirrers about 20 cms from the bed of green malt.
