Abstract

In producing malt by steeping, germination and kilning of barley, a malt product having an improved clean golden colour and less sprout growth is obtained by the addition of pyrophosphoric acid to the malting barley during steeping and/or germination. The pyrophosphoric acid employed preferably has about 78.0% P2O5. An aqueous solution containing between 0.01% and 0.75% by weight of the pyrophosphoric acid, preferably between 0.1% and 0.4% by weight, may be employed during the steeping operation; more concentrated solutions may be sprayed over the grain during germination. In certain of many examples, the first steep water includes pyrophosphoric acid (0.2%) and citric acid (0.2%), the second steep water contains sodium bisulphite or hydrosulphite, and pyrophosphoric acid and citric acid are included in the germination watering; tap and de-ionized water are specified. The use of hydrochloric acid in steep water and of ozone in germination are also disclosed.
