Headings F4G and F4H A heat exchanger e.g. for use a vacuum shelf drier or a refrigerator, comprises an evacuable container 30 housing a casing 10 having vertically-spaced, similar, cavity plates 13 mounted therein, each cavity plate having an inlet port 14 and an outlet port 15 for the passage of hot or cold fluid medium. An inlet duct 18, an outlet duct 20 and an intermediate duct 19 communicate respectively with all the inlet ports 14, the outlet ports 15 and the spaces between the plates 13. Each duct 18, 19, 20 has a drain and the chamber in each cavity plate has longitudinal partitions 28 to constrain the fluid to move therethrough in extended, sinuous path. The material to be heat treated may be positioned within or without trays directly on the plates 13, or on conveyer bands arranged to run over the plates in a continuous process.
