Abstract
L'invention est relative à un procédé de production d'un amidon thermiquement modifié comprenant les étapes consistant à : (i) préparer un lait d'amidon présentant une matière sèche comprise entre 30 et 40 %, de préférence entre 35 et 37 % en poids, (ii) ajouter un agent alcalin en poudre de manière à obtenir une conductivité finale comprise entre 0,7 et 2,5 mS/cm, (iii) assurer un temps de contact compris entre 0,5 et 5 heures, (iv) filtrer et sécher le lait d'amidon, (v) chauffer ledit amidon séché de manière à le porter à une température de plus de 180°C pendant un temps de séjour compris entre 12 et 35 minutes.
