-1- La présente invention concerne un dispositif pour ouvrir les huîtres en toute sécurité, en tranchant le muscle de celle-ci sur le côté. Il s'agit d'un couteau securisé qui s'utilise comme un couteau normal. Actuellement, l'ouverture des huîtres, sur le côté, se fait a l'aide d' un sim-5 ple couteau, ce qui peut entraîner une blessure de la main si la lame dérape vers le haut ou vers le bas. Ces couteaux possèdent actuellement une protection des doigts pour la main tenant le manche, mais pas pour la main tenant l'huître. Le dispositif selon l'invention permet de remédier à cet inconvénient. Il 10 comporte en effet selon une première caractéristique, une protection haute, située en parallèle au dessus de la lame du couteau à une distance équivalente à l'épaisseur moyenne d'un chapeau d'une huitre. Cette protection, qui encadre la lame, est constituée d'un fil inox, rigide, arrondi en bout et plongeante sur sa partie terminale, sur environ 1 cm. 15 Elle est légèrement plus longue que la lame d'environ 1/3 ce qui lui permet de chevaucher le chapeau de l'huître avant ouverture. Elle vient se fixer à la base de celle-ci, ou dans le manche au niveau du protège doigts.
