Carmelising iron of the type including a heating element secured to a handle and connected to an electrical power source by a cord, characterised in that the heating element is a cast-iron block 3 in which a heating wire 5, wound up into a spiral, is embedded in a refractory material, in that the said block is removably mounted on a plate 2 integral with a hollow handle 1 equipped with a grip 7 which is also removable, and in that the strands of the heating wire extend inside the handle 1 as far as the grip where they are connected to the power cord wires 6 via rapid connection means.
