The coated prods. have a practically unlimited shelf-life when stored in sealed containers.

Description

The present invention relates to coated products comprising a core and a coating adhering to the core, in which at least one layer of the coating consists essentially of a sugar. Products of this kind are typical of the confectionery and pharmaceutical industries.

Sugar is usually sucrose, very often mixed with flavorings, bleaches or colors.

In many cases, the presence of sucrose is undesirable, for example for dietary reasons. We also know that sucrose is a cariogenic substance, and we have already tried in the art to substitute it with sorbitol in various confectionery products. For example, chewing gum has already been proposed, in which the gummy component is sweetened with sorbitol.

However, the use of sorbitol in place of sucrose in the coating of sugar-coated product nuclei has never hitherto been seriously proposed. In fact, as has also been confirmed by the experiments carried out by the applicant, it has not been possible, until now, to obtain with sorbitol a smooth coating, of homogeneous structure, devoid of graininess and having a sufficient degree of drought. On the other hand, it is known that sorbitol exhibits a significant tendency to retain moisture tenaciously, and this characteristic makes it difficult, and in some cases impossible, the operation of drenching which is the basic operation for the production of sugar-coated products.

The present invention is based on the discovery that the above-mentioned drawbacks can be avoided by using sorbitol mixed with a sucrester.

Sucesters are sucrose esters with C14 - C18 fatty acids, such as myristic, oleic, palmitic and stearic acids in particular. Thanks to the presence of highly hydrophilic groups (sucrose) and lipophilic groups (one or more fatty acid radicals), the sucresters have excellent emulsifying properties and are used for this purpose also in the food industry. With regard to the present invention, it should be noted, however, that sorbitol is water soluble with very great ease, so that the above finding is extremely surprising.

Consequently, one of the objects of the invention consists of a coated product as defined above, characterized in that the sugar is sorbitol in admixture with a sucrester. The proportion of sucrester can vary from 1 to 8 parts by weight per 100 parts by weight of sorbitol; the proportion of 3 parts by weight being entirely satisfactory and therefore preferred. The sucrester is preferably chosen from palmitates and sucrose stearates. It is possible to use a mono-ester, or a di-ester, or preferably a mixture of mono- and di-esters. However, commercially available sucresters comprising a mixture of mono-, di- and tri-esters can be used with advantage. For example, particularly suitable sucresters available on the market are those marketed under the name
WASAG-ESTERS, and in particular those based on sucrose palmitates and stearates. Among these, WASAG-ESTER 11, which comprises approximately 50% of mono-esters and approximately 70% of stearates, has given excellent results, and it is also possible to use with advantage WASAG-ESTER 7 which comprises approximately 70% of stearates and approximately 40% mono-esters, or WASAG-ESTER 15 which comprises approximately 30% stearates and approximately 70% mono-esters.

As is known, during the coating, the coating is formed in successive layers. In the product according to the invention, the distribution of the sucrester is homogeneous in each individual layer formed of sorbitol in admixture with the sucrester. Given the extreme thinness of the layers, the distribution of the sucrester is practically homogeneous in all the layers thus formed. In any case, as will be seen more clearly in the following description, this distribution depends on the methods of execution of the drenching process.

Another subject of the invention consists of an aqueous syrup for the production of coated sugar-coated products, this aqueous syrup being characterized in that it contains sorbitol and a sucrester. The preferred characteristics of the syrup are those already indicated for the finished product. Of course, in addition to sorbitol and the sucrester, the syrup can also contain flavoring substances, taste agents (for example citric or tartaric acid), thickeners, colorants or bleaching agents.

However, it is preferable not to include the bleaching agent in the syrup, but on the contrary to apply it in the form of a dry powder, preferably in admixture with anhydrous sorbitol powder (sorbitol ice) in stages interposed between the steps of spraying the syrup into the basin, as we will see later. The dry powder, to be used in these intermediate "dusting" steps, may contain from 70% to 100% anhydrous sorbitol and, correspondingly, from 30% to 0% of rice starch, the preferred proportions being respectively 90% and 10%.

A further object of the invention consists in a process for the manufacture of coated sugar-coated products, which comprises a plurality of spraying steps with an aqueous syrup containing a sugar, characterized in that the sugar consists of sorbitol and that the syrup also contains a small proportion, relative to sorbitol, of a sucrester. Preferably, the sucrester and its relative proportions are as indicated above for the product. In addition, preferably, the method according to the invention is characterized in that between the steps of spraying with the syrup, dusting steps are interspersed with anhydrous sorbitol powder, advantageously in admixture with a minor amount of starch from rice as a bleaching agent. Preferably again, for each dusting step, use an amount of sorbitol, or a mixture of sorbitol and starch, corresponding to approximately half the amount of dry matter of the syrup sprayed in the step. previous spray. In general, the weight ratio between "the dry matter sprayed" in one step and "the dry matter dusting" in the next step can vary between about 4: 1 and about 1: 1.

Exemple
Example
A basin having a diameter of 45 cm is used, rotating around an axis inclined by 30 with respect to the vertical, at a speed of 47 revolutions / minute. Was introduced into the basin 1.9 Kg of cores to be coated, consisting of cylindrical tablets with rounded ends, having a diameter of 5 mm and a length of 11 mm.

A syrup composed of 100 parts by weight of anhydrous sorbitol, 3 parts by weight of WASAG-ESTER 11 and 100 parts by weight of water is prepared separately. In general, the operation is carried out at 50-70 ° C., first dissolving the sugar ester in water, then the optional starch, then the sorbitol and finally all the possible remaining ingredients mentioned in the preceding description. In this example, in addition to the sucrester and sorbitol, flavorings (about 1% by weight) are added.

A dusting mixture is also prepared, consisting of 90 parts by weight of anhydrous sorbitol powder (maximum 50 microns) and 10 parts by weight of rice starch.

(d) - homogénéisation pendant 120 secondes avec de l'air à 30-350C ;
(e) - séchage pendant 180 secondes avec de l'air à 30-350C ;
(f) - pause pendant 20 secondes.
The drenching process includes 170 cycles consisting of the following steps
(a) - spray for 5 seconds with 12 g of syrup at a temperature of 60-650C
(b) - homogenization for 90 seconds
(c) - dusting for 5 seconds with 3 g of the dusting mixture
(d) - homogenization for 120 seconds with air at 30-350C;
(e) - drying for 180 seconds with air at 30-350C;
(f) - pause for 20 seconds.

Said 170 cycles are followed by 10 other cycles, which however do not include steps (c) and (d), and the basified product is then dried at 30 ° C. for 24 hours. The weight of the finished product is approximately 2.9 Kg.

There is no difficulty in carrying out the drenching. The dragees have a white coating, compact, devoid of roughness and having no graininess which can be noted in the mouth during consumption. The storage period in closed containers is practically unlimited.
