Abstract

Industrial cooking equipment for food prods. The equipment comprises a top-loading, cooking chamber with a top cover which can be removed or opened wide. The chamber has an outlet drain valve. The chamber is loaded with a stack of prod. carrier trays standing one on another in superimposed arrangement. Each tray has a set of mould cavities or channels sunk into the tray alongside each other when loaded with prod., each tray is fitted with a cover plate, pref. flat, extending over all the cavities. The assembled stack of loaded trays sits on top of a flat lifting board, deck or pallet to which lifting hooks can be attached. The cooking chamber can be an autoclave, a cooking pot or an oven. The trays can be rectangular with parallel, straight channels or circular or oval with concentric, annular channels. The trays are easily handled and stacked. The complete stack is easily loaded into and removed from the cooking chamber. The quality and appearance of the cooked prod. are better than previously.
