Abstract

In a first stage the substantially molten substance, such as chocolate or its substitutes, comprising a flat phase contg. mostly triglycerides and opt. free fatty acids, is seeded with crystallisation germs inducing a stable crystallisation and a later stage in which the seeded substance is passed into matrices defining a final form of followed by cooling in a regulated temp. zone. The improvement comprises seeding of dispersion of a substance of analogous compsn. which contains 0.01-1.5 % of a dried gum to give it a quasi vitreous structure determined by the stretched long chains of the gum. The seeded substance is then passed along a cooled wall, before it effectively sets, such that the internal heat of the substance is below that of the substance when set. The improvement enables reduction of the setting time.
