Abstract

Cheese, esp. soft cheese, is prepd. by transferring the compsn. contg. coagulation prod., (I), and whey, (II), without causing relative motion between (I) and (II). The mixt. of (I) and (II) is pref. transferred temporarily to a pre-form before draining. The process pref. takes place in 3 consecutive phases. In the 1st phase, the partly drained mixt. of (I) and (II) is transferred to a storage and distribution container, the bottom of which is fitted with a closure allowing storage container vol., in open position, to be combined with the vol. of a pre-form. In the 2nd phase, the mixt. is transferred and measured out into a non-perforated pre-form, without shaking. Pre-form vol. can be altered by the vertical motion of a piston, which moves the pre-form bottom so as to achieve min. vol. in top- and max. vol. in bottom position. In 3rd phase, the mixt. is transferred into a perforated master mould, without shaking. The prod. can be compacted and achieves good consistency for subsequent working.
