Abstract
Использование: в молочной промышленности , в частности при формовании и прессовании твердых сыров. Сущность изобретени : перед разрезкой сырного пласта провод т предварительное его прессование в течение 0,5-2 ч при давлении от 1-3 до 10-30 кПа, а прессование сыра в формах осуществл ют в течение 0,5-2 ч при давлении 20-45 кПа, причем во врем прессовани провод т не более одной перепрессовки.Usage: in the dairy industry, in particular in the molding and pressing of hard cheeses. Высокие давлени , примен емые на более поздних стади х прессовани , малоэффективны, не увеличивают скорости выделени сыворотки. По нашим данным на этапе прессовани Советского сыра давлении 45-60 кПа в течение 1,5-2 ч (40% продолжительности прессовани ) выдел лось не более 8% всей сыворотки, выделившейс при прессовании. Кроме того, применение высоких давлений приводит к следующим отрицательным последстви м: происходит выдавливание сырной массы в зазоры между крышкой и корпусом форм. Эти выпрессовки срезаютс ножом и идут в отходы, что увеличивает потери продукта; сырна масса затекает в отверсти дренажного материала и прилипает к нему. При этом прекращаетс отвод сыворотки , а при распрессовке происходит повреждение поверхности сыра.
