Abstract
L'invention concerne un procédé de déstabilisation thermique de présure microbienne et les produits ainsi obtenus. On modifie la présure microbienne en la soumettant à une acylation avec un dérivé actif d'un acide monocarboxylique dans un milieu aqueux à un pH compris entre environ 6 et environ 11 et à une température se situant entre environ 0 oC et 40 oC, le rapport pondéral entre l'agent d'acylation et la quantité totale de proétine se situant entre 0,01 et 10. L'invention est utilisée pour la fabrication du fromage.
