Abstract

Four de boulanger associant une cuisson de la mie par pertes diélectriques et une cuisson de la croûte par infrarouges. Le four 1 comporte un transporteur 3 avec des nappes supérieure 4 et inferieure 5. La cuisson de la mie est effectuée dans le caisson 8 où règne un champ électromagnétique décimétrique. La cuisson de la croûte est induite par le rayonnement infrarouge du feuillard 9, entre les nappes 4 et 5, et des feuillards 10 et 11, sous la nappe inférieure 5. Ces feuillards s'étendent sur toute la largeur du four, et sont traversés longitudinalement par des courants électriques qui les portent à des températures de 350 à 500 degrés C. Application à la cuisson rapide de pains en boulangerie.
