Abstract

Installation et procédé de cuisson en continu pour moût de brasserie avec récupération de chaleur latente. Installation remarquable par l'utilisation de trois chaudières cylindro-coniques chauffées par la vapeur provenant en majeure partie de la récupération de l'énergie calorifique de la vapeur produite par l'ébullition même du moût, et d'un circuit unique de récupération des vapeurs du moût, à partir du haut des chaudières comprenant un compresseur, une injection de vapeur fraîche d'appoint et un saturateur, circuit de récupération qui alimente en vapeur recompressée et saturée un échangeur-condenseur dans chaque chaudière où la chaleur récupérée contribue à l'apport calorifique total nécessaire à la cuisson. Applications : cuisson du moût en brasserie ou autres opérations analogues.
